A while ago I created a recipe for homemade BBQ sauce that is so delicious it’s outrageous. I’ve shared it in different recipes on the blog before, but it is so good that I’ll never stop finding new ways for you guys to use it! This instant pot BBQ pulled pork is the best way to enjoy pulled pork that is easy, delicious, and has no grilling involved. That way if you don’t own a grill or don’t feel like using it, you can still find a way to enjoy pulled pork with this amazing homemade sauce.
Here’s the thing about using a pressure cooker or slow cooker to make pulled pork. If you wait until it’s fall apart tender, the meat can actually be a little dry. I found that cooking at high pressure for 40-45 minutes was the ticket, then transferred the meat to a cutting board to cut/shred before returning it to the pressure cooker. I know you could cook it for longer and the meat would fall apart more easily, but trust me, you don’t want to do that. It’s much better this way!

- 1 tbsp. oil
- ½ yellow onion, diced
- 3 cloves garlic, minced
- ¼ cup molasses
- 1 cup ketchup
- ½ cup brown sugar
- ¼ cup apple cider vinegar
- 1 tbsp. Worcestershire sauce
- 2 tsp. smoked paprika
- ½ tsp. chili powder
- 2 tbsp. yellow mustard
- ¼ tsp. ground black pepper
- A few dashes of hot sauce
- 2 - 2.5 lb. pork loin
- Set instant pot to saute and heat oil. Add onion and garlic and cook until tender.
- Add molasses, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, yellow mustard, black pepper, and hot sauce to instant pot. Bring to a simmer.
- Add pork loin to instant pot and spoon the sauce over the pork.
- Cover and set to high pressure for 45 minutes.
- Allow to naturally release, then check the internal temperature of the pork to ensure it is 160 degrees Fahrenheit.
- Remove pork from pressure cooker and place on a cutting board. Use a knife to chop the meat then shred with two forks. Return to pressure cooker and stir to mix with sauce.
- Serve on buns with cole slaw. Enjoy!

[…] The two steps that I always take to prepare tofu are pressing the extra moisture out of it, and baking it in the oven before tossing it in a stir fry. To press the extra moisture out, I simply wrap a block of extra firm tofu in a dish towel and put something heavy on top, like my cast-iron skillet.
