Have you seen a trend with a lot of the dinners that I share on here? They are either easy and come together in about 30 minutes, sometimes less, or are made in the Crock Pot or Instant Pot. I also have the occasional recipe that requires minimal prep and then bakes in the oven for a while. Basically, the dinners I share are for people who are busy (so, everyone). Maybe you’re a stay-at-home parent and 5pm-bedtime is crazy. Maybe you work and would rather get in a yoga session or a run after work than spend an hour in the kitchen. Maybe you work all day and come home to your family, and you just want something delicious that comes together quickly.
Most people don’t want to and don’t have the ability to spend an hour or more in the kitchen every night preparing a meal. That’s one of the reasons why I started this blog; I wanted to show people that cooking a good meal doesn’t have to be difficult or time-consuming. This herb shrimp couscous is ready in about 20 minutes. It’s easy enough for a weeknight, but delicious enough to serve guests for a casual summer get-together. I grow fresh herbs in my garden every summer, and want to put them in just about everything.
While the couscous is boiling in one pot, you sauté the shrimp in butter, garlic, and fresh herbs. It’s such a simple concept, but I find that when I’m in a recipe rut, sometimes even the easiest dinner combinations don’t pop into my head. Easy recipes take the guesswork out it. Throw them on your meal plan, make them in less than 30 minutes, and have a happy family.
This dish is perfect for spring, or summer, or anytime you have some fresh herbs that you’re looking to put in something. I absolutely love this herby couscous with shrimp, but it would also be great with scallops if you’re looking for something fancier. Add this to your meal plan and I’m sure you and anyone that you serve it to will love it!
- 1 cup dry couscous
- 4 tbsp. butter
- 3 tbsp. olive oil
- 3 cloves garlic, minced
- 4 tbsp. fresh herbs (I used a mixture of oregano, thyme, and basil)
- 1 lb. cooked shrimp, peeled and deveined
- ½ tsp. salt + more to taste
- ¼ tsp. freshly ground black pepper
- In a small saucepan bring a large pot of water to a boil. Add couscous and simmer until water is gone. Don't stir the couscous while it is cooking! Just let it cook and when the water is gone, place the lid on the pot and turn off the heat. This will ensure you have nice, fluffy couscous.
- In a large frying pan, melt the butter. Add olive oil.
- Add the garlic and herbs and cook until fragrant.
- Add shrimp to pan and cook until heated through. Add salt and pepper and stir to combine.
- Add couscous in the pan and stir to combine.
- Taste and add additional salt if desired. Serve immediately.
