Herb Shrimp Couscous

Ingredients
  • 1 cup dry couscous
  • 4 tbsp. butter
  • 3 tbsp. olive oil
  • 3 cloves garlic, minced
  • 4 tbsp. fresh herbs (I used a mixture of oregano, thyme, and basil)
  • 1 lb. cooked shrimp, peeled and deveined
  • ½ tsp. salt + more to taste
  • ¼ tsp. freshly ground black pepper
Instructions
  1. In a small saucepan bring a large pot of water to a boil. Add couscous and simmer until water is gone. Don't stir the couscous while it is cooking! Just let it cook and when the water is gone, place the lid on the pot and turn off the heat. This will ensure you have nice, fluffy couscous.
  2. In a large frying pan, melt the butter. Add olive oil.
  3. Add the garlic and herbs and cook until fragrant.
  4. Add shrimp to pan and cook until heated through. Add salt and pepper and stir to combine.
  5. Add couscous in the pan and stir to combine.
  6. Taste and add additional salt if desired. Serve immediately.
