This recipe for Greek tortilla roll ups is what I like to call a “non recipe.” It’s meant to inspire you to create an easy meal, but the ingredient measurements can be adjusted as you see fit! We’ve been in a heat wave here in Washington state, and since we only see temperatures above 85 degrees a few times a summer and have no humidity, most people don’t have air conditioning. But when temperatures hit 91 degrees, that feels HOT, and the last thing that I want to do is turn on the oven or stand over the stove cooking a meal. That makes these Greek tortilla roll ups absolutely perfect.
All you need for this recipe are ingredients common to what most people interpret as Greek! I would love to go to Greece someday to enjoy the food and see the amazing views, but for now, Greek cuisine is something I’ll only dream of. In these wraps you’ll find hummus, tomatoes, feta cheese, Kalamata olives, and lettuce. I realize that lettuce actually isn’t an ingredient in Greek salad, but I do use it here for some crunch! I kept these wraps vegetarian, but you can always add grilled chicken if you wanted to add some meat. And while it may be unconventional, some mashed avocado and/or bacon would be great additions too!
I cut these Greek tortilla roll ups for the kids, but if you’re in a hurry or want to enjoy them by yourself, you can leave them wrapped up and just enjoy burrito-style! You can probably fit more filling inside too, and that’s simply the best part.
- Tortillas
- Hummus
- Shredded Iceberg lettuce
- Chopped tomatoes
- Feta cheese
- Chopped Kalamata olives
- Lay the tortillas out flat and spread hummus on the tortillas.
- Fill with lettuce, tomatoes, cheese, and olives.
- Roll up, slice, and serve immediately. Enjoy!

These tortilla roll ups may not be traditionally Greek, but they definitely contain Greek flavors! You can easily make substitutions, too, depending on what you have on hand.
