Of all the winter citrus that’s in abundance this time of year, grapefruit is my favorite. Which is really unfortunate because no one else in my family likes it! I can eat it by itself, as juice, or as a delicious accent to just about any dish. The tart grapefruit goes so well with floral olive oil, making this grapefruit olive oil cake a knockout.
Traditional pound cake uses a pound of butter, but this cake has none of it! Greek yogurt and olive oil make this cake moist and flavorful. Grapefruit juice and zest are both in the cake, and the whole thing is topped with a delicious grapefruit glaze. What’s not to love?
This cake makes a refreshing and easy dessert, a sweet treat for breakfast, and the thing I want to enjoy most with my afternoon tea. Yes, I drink tea almost every afternoon and I really love to enjoy something sweet with it. In the afternoons I get a brief moment of quiet while my younger two kids nap and my oldest either naps or plays quietly in the playroom and enjoying a hot cup of tea is perfection. Sometimes I only have 30 minutes of overlapping naptimes with the kiddos but I do try to take a minute to myself before powering through to bedtime!
Don’t let citrus season pass you by without making this delicious pound cake! I’m already making plans to enjoy it again sometime soon.
- 3 eggs
- 1 cup granulated sugar
- ½ cup olive oil
- 1 cup plain Greek yogurt
- 1 tsp. vanilla
- ¼ cup grapefruit juice
- 2 tbsp. grapefruit zest
- 1½ cups all-purpose flour
- ¼ tsp. salt
- 2 tsp. baking powder
- 1½ cups powdered sugar
- 2-3 tbsp. grapefruit juice
- Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper.
- Using a stand mixer or hand mixer, beat eggs and sugar until pale yellow in color.
- Add olive oil, Greek yogurt, vanilla, grapefruit juice, and grapefruit zest and beat until smooth.
- In a medium bowl, whisk together flour, salt, and baking powder.
- Add dry ingredients to wet ingredients and mix until just combined.
- Pour the batter into the prepared pan and bake for 45-55 minutes until a toothpick inserted into the center comes out clean.
- Remove cake from pan and allow to cool.
- Whisk together powdered sugar and 2 tbsp. of the grapefruit juice. Add the remaining tbsp. of grapefruit juice as needed to reach desired consistency.
- Drizzle the glaze over the cake, slice, and enjoy!
