Grapefruit Olive Oil Cake

Ingredients
Cake
  • 3 eggs
  • 1 cup granulated sugar
  • ½ cup olive oil
  • 1 cup plain Greek yogurt
  • 1 tsp. vanilla
  • ¼ cup grapefruit juice
  • 2 tbsp. grapefruit zest
  • 1½ cups all-purpose flour
  • ¼ tsp. salt
  • 2 tsp. baking powder
Glaze
  • 1½ cups powdered sugar
  • 2-3 tbsp. grapefruit juice
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper.
  2. Using a stand mixer or hand mixer, beat eggs and sugar until pale yellow in color.
  3. Add olive oil, Greek yogurt, vanilla, grapefruit juice, and grapefruit zest and beat until smooth.
  4. In a medium bowl, whisk together flour, salt, and baking powder.
  5. Add dry ingredients to wet ingredients and mix until just combined.
  6. Pour the batter into the prepared pan and bake for 45-55 minutes until a toothpick inserted into the center comes out clean.
  7. Remove cake from pan and allow to cool.
  8. Whisk together powdered sugar and 2 tbsp. of the grapefruit juice. Add the remaining tbsp. of grapefruit juice as needed to reach desired consistency.
  9. Drizzle the glaze over the cake, slice, and enjoy!
