I’m back with a third recipe made with the Washington Beef Commission! In case you missed the first two recipes, be sure to check out the recipes for steak salads with creamy balsamic vinaigrette and sliders with tomato bacon jam and whipped goat cheese. Today I’m bringing you garlic butter steak bites. The ultimate girl dinner is a charcuterie board and you can make this recipe to add to your spread! They’re the perfect compliment to your other meats and cheeses. Whenever I make a charcuterie board I have an assortment of meats, cheeses, and crackers like most people. I also like to add olives, pickles, nuts, some sort of fruit like apple slices, veggies like snap peas and bell peppers, sundried tomatoes, and cranberry hot pepper jelly. When I make these garlic butter steak bites I also whip up a quick horseradish aioli for dipping.
Ingredients for Garlic Butter Steak Bites
- Steak: The obvious ingredient! I used pre-cut beef stew meat but you can use any cut of beef and cut it into bite-sized pieces yourself. Feel free to use a more inexpensive cut of beef here. This is a great recipe to add flavor to an inexpensive cut of beef as well!
- Garlic: lots of garlic here, I used 8 large cloves. You can tone it down or add more depending on your taste.
- Butter: We’re going to melt the butter and add the garlic to the pan to cook, making an easy basting option.
- Fresh rosemary: Fresh is key here, it adds a great flavor to the garlic butter.
- Salt and pepper: can’t have a steak recipe without them!
How to Make Garlic Butter Steak Bites
- Place all the beef onto skewers. If you haven’t bought pre-cut beef, you need to do that before this step! Season with salt and pepper.
- Melt the butter in a small saucepan and add the minced garlic and fresh rosemary. There’s no need to chop the rosemary, we’re using it to infuse the butter but will remove it before basting. Baste the skewers with the garlic butter and set aside.
- Fire up the grill and add the skewers! These are small pieces of beef and will cook quickly. At 500 degrees Fahrenheit, they’ll only need 2-3 minutes per side. Baste during cooking as well for maximum flavor!
- Let the meat rest for about five minutes before removing from the skewers.
- Serve with your favorite charcuterie board items! I like crackers, cheese, pickles, olives, nuts, fresh fruits and veggies, and a little horseradish aioli for dipping.
Get your friends together and make these garlic butter steak bites! They are perfect for a movie night or to enjoy outside. They’re easy to prepare, easy to make, and definitely easy to eat.
- 1-2 lbs. cubed steak (I used pre-cut beef stew meat)
- 3 tsp. kosher salt
- 3 tsp. freshly ground black pepper
- ½ cup salted butter
- 8-10 cloves garlic, minced
- 3 springs fresh rosemary
- Preheat your grill to 500 degrees Fahrenheit before preparing your steak.
- Place the cubed beef on a large plate, baking dish, or sheet pan. Season with salt and pepper and add to skewers. Leave a little bit of space in between each piece of steak to allow it to get crispy on all sides.
- In a small saucepan, melt the butter. Add the garlic and rosemary and cook for a few minutes until fragrant. Remove the large rosemary sprigs. Any smaller pieces of rosemary can be left in the butter.
- Baste the skewers with the garlic butter before adding to the grill. cook for 2-3 minutes per side until the edges are crispy and the internal temperature is 125 degrees Fahrenheit. Baste the skewers with additional garlic butter each time you flip them.
- When done cooking, allow the skewers to cool for a few minutes before removing and adding to your charcuterie board.
- Enjoy!
