I’ve been sharing a lot of of mocktail recipes this summer and it has been so much fun! I have one more coming before the end of my pregnancy and then you can get excited for cocktail recipes! Watermelon season is in full swing, but since only two people in my house actually like watermelon, buying a whole fresh watermelon and eating it before it spoils is sometimes a challenge. Generally when I cut up a watermelon we eat about 2/3 of it fresh and I freeze the rest. But what to do with that frozen watermelon? This frozen watermelon mint limeade is perfect.
There are just four ingredients in this recipe, and because it’s a mocktail, alcohol is not in that ingredient list. I’m sure this would be delicious and refreshing with alcohol as well, but the four main ingredients you need for this frozen watermelon mint limeade are watermelon, lime juice, honey, and mint. You can adjust any of these ingredients to your liking as well! I don’t find the need for additional liquid for blending using my Vitamix blender, but if you’re using a blender that’s not as high-powered or want a thinner consistency you can add some water or your favorite fruit juice.
I only need two tablespoons of honey in this mocktail recipe, but you may need to add more if you don’t have as sweet of a watermelon. I’ve also seen yellow watermelon and that could be a pretty twist on this frozen watermelon mint limeade! I used fresh mint from my garden for this recipe and grabbed a small handful of the leaves. Feel free to use more or less depending on how much mint flavor you want! You can also tailor the amount of lime juice as well. This recipe is completely customizable and so delicious and refreshing!
The best news about this recipe is that you can make it anytime since it uses frozen watermelon! While you can get your hands on the sweetest watermelon, make sure you freeze some of it to enjoy this mocktail anytime.
- 2 limes, juiced
- 4-6 cups frozen watermelon chunks
- 2 tbsp. honey (or more if desired)
- Handful of fresh mint leaves
- Place all ingredients in a high-speed blender and blend until smooth! Add alcohol if desired and blend again.
- Taste and add more mint, lime juice, or honey as needed.
- Enjoy!
