I have had a lot of fun creating non-alcoholic drinks this summer! I’m just about a month away from being able to enjoy a cocktail, but for now, this cucumber melon agua fresca is the perfect refreshing drink. It makes a whole pitcher and is delicious for the whole family to enjoy, and it’s the prettiest green color. Agua fresca is simply a blend of fruit and water. I strain out the pulp from the juice for a smooth refreshing drink.
The ingredients for this agua fresca are simple: cucumber, honeydew, honey, lime juice, fresh mint, and water. I’ve provided the ingredient quantities that I used below in the recipe, but you can feel free to adjust them as needed. Add some extra mint or lime juice, and you can omit the honey altogether if you have a really sweet honeydew. It is important that you peel and seed the cucumber before blending because even though you’re straining out the pulp, the seeds and skin could make the drink bitter.
You won’t want summer to pass you by without enjoying this refreshing cucumber melon agua fresca. It’s perfect to make on a weekend to sip outside in the sun! It’s best enjoyed as soon as you make it and served over ice, but I don’t think you’ll have a problem finishing it. My kids enjoyed this too, but they like any drinks that are a cool color, and green is one of those colors. I hope you enjoy this mocktail!
- 4 cups cubed honeydew melon
- 1 cucumber, peeled, seeds removed and roughly chopped
- ¼ cup honey
- Juice of 1 lime
- ½ cup fresh mint leaves
- Lime wedges, cucumber slices, and/or mint leaves for garnish (optional)
- Place all ingredients in a high speed blender with 4 cups of water. Blend until very smooth.
- Place a fine-mesh sieve over a large bowl or pitcher and pour the liquid through in batches to strain out the pulp.
- Serve over ice garnished with cucumber slices, lime wedges, and/or fresh mint leaves.
- Agua fresca is best enjoyed the same day it is made.
