I can’t believe how quickly Christmas has snuck up on us! We fly to Chicago this weekend to spend Christmas with my family. It’s our first time being there for Christmas since Kevin and I have been married and I think it’ll be a real treat for the kids. All of my siblings will be there too, and as long as we can survive the flight with three kids under five on one of the busiest travel weekends of the year, it’s going to be a fun-filled week. In celebration of Christmas being next week, I have this cranberry rosemary champagne cocktail for you. This is my second cocktail that I’m making in partnership with my friend Jen of Grape Juice Mom and I’m so excited about it!

I tell her what I’m thinking of for a cocktail, and she gives me the perfect wine or bubbly to make it. She is the expert on giving you the perfect wine or bubbly for whatever occasion you have in mind. And the best part? She isn’t going to break the bank doing it. She recommended Cava for this cranberry rosemary champagne cocktail and after one sip I knew it was the perfect choice.
Here’s what Jen has to say about bubbly! There are four predominant types of bubbly: Champagne, sparkling wine, Cava, and Prosecco. Each has its own distinct traits, but I recommended Cava for this Cranberry Christmas Cocktail for a few reasons. Cava is crisp with powerful bubbles, which is comparable in style to a younger Champagne without the high price point. This recipe brings in some strong flavors that needed a bubbly with enough structure as to not overpower the wine. And obviously bubbly was a good fit since the holidays are always worth celebrating!
This cranberry rosemary champagne cocktail has the perfect hint of rosemary thanks to a rosemary simple syrup. Mixed with cranberry juice, bubble, and vodka, you have yourself a pitcher of delicous cocktails. I recommend serving it chilled or over ice! I promise you that this drink will disappear.
- ¾ cup water
- ¾ cup granulated sugar
- 4 sprigs fresh rosemary, chopped
- 2 cups cranberry juice
- 1 cup vodka
- 1 bottle Cava
- Make the rosemary simple syrup. Place water, sugar, and rosemary in a small saucepan. Bring to a simmer over low heat and cook until reduced by half, about 15-20 minutes. Strain the rosemary leaves from the liquid and set the simple syrup aside to cool.
- In a large pitcher pour cranberry juice, vodka, and rosemary simple syrup. Stir to combine.
- Carefully pour in Cava and stir carefully to combine. Alternatively, you can serve the simple syrup/cranberry juice/vodka mixture in glasses and top with the Cava.
- Chill until ready to serve.
