I love spending hours in the kitchen to prepare a big holiday meal. There is something so satisfying about sitting down to a table filled with your loved ones covered with foods that have become holiday traditions. But if there is one place I don’t want to spend a lot of time, it’s working on appetizers. In my mind, appetizers should be easy to make and easy to eat but also delicous. This cranberry brie crostini works on all fronts! Crispy French bread, creamy brie cheese, and a perfectly tart and sweet cinnamon cranberry sauce come together for the perfect appetizer that’s ideal paired with the Oregon Pinot Noir by Erath Wines.
This recipe uses cinnamon orange cranberry sauce, but if you have any cranberry sauce left from your Thanksgiving dinner, that’s perfect to use as well! If I have any leftover cranberry sauce I like to keep it in the freezer for occasions just like this. To make your own cinnamon cranberry sauce, first add all the cranberry sauce ingredients to a medium saucepan and bring to a simmer. Keep an eye on it because it can boil over if the temperature is too high! While the cranberry sauce is simmering and thickening, slice the French bread and add some creamy brie on top before putting in the oven. This allows the bread to toast and the brie to melt for the perfect combination of crunchy and creamy.
Spoon the cranberry sauce onto the prepared crostini and serve immediately with a bottle of pinot noir. The Oregon Pinot Noir from Erath wines couldn’t be more perfect to pair with this cranberry brie crostini because it has tasting notes of cranberry in it! Turn on the fireplace, light some candles, and cozy up on the couch with your nearest and dearest as you toast the end of the year and ring in a new one. - 1 lb. cranberries (fresh or frozen)
- 1 cup orange juice
- ½ tsp. ground cinnamon
- 3 tbsp. brown sugar
- 1 loaf French bread
- 8 oz. brie cheese
- Preheat oven to 350 degrees Fahrenheit.
- In a medium saucepan, place cranberries, orange juice, cinnamon, and brown sugar. Bring to a simmer and reduce to low heat, stirring frequently, until thickened.
- Slice the French bread and place on a rimmed baking sheet.
- Place slices of brie onto each piece of bread, then bake for 10-15 minutes until the bread is toasted and the brie is melted.
- When the cranberry sauce has thickened, spoon it onto the pieces of bread.
- Serve immediately. Enjoy!
