A warm brownie topped with a scoop of ice cream, drizzled with chocolate sauce, and topped with whipped cream? That’s the best dessert right there. And if you’re using cookies and cream brownies? Even better! I have always loved a good, delicious, fudgy brownie and thankfully it’s not too difficult to make them from scratch. Most of the ingredients used to make brownies can be found in the pantry of anyone who bakes even semi-frequently: flour, butter, sugar, cocoa powder, eggs, vanilla, oil. I made these similar to a boxed mix so they are even faster to make, using cocoa powder instead of melted chocolate.
Brownies are pretty simple to make, but they are very easy to overbake. The key to the best brownies is to take them out when they are just a little bit underdone. They will continue to cook in the pan, and when you remove the brownies after they are completely cooled, they’ll be perfect. If you wait until they seem perfectly done before taking them out of the oven, they will actually be drier and a little hard once they have cooled completely. Especially with the addition of Oreo crumbles to these cookies and cream brownies, they are essentially another dry ingredient added to the batter. The moral of the story is: underbake your brownies!
Just like Oreos, these brownies pair well with a glass of cold milk! Or microwave the for 20 seconds and add a scoop of vanilla ice cream. You can’t go wrong, and I promise that these brownies won’t last long! I like to add a few larger pieces of crumbled Oreos and some chocolate chips on top to make them a little prettier but it’s completely optional. These brownies will be delicious either way!
- 1½ cups granulated sugar
- ¾ cup all-purpose flour
- ⅔ cup cocoa powder
- ½ tsp. salt
- ½ cup melted and cooled butter
- 2 eggs
- 1 tsp. vanilla extract
- 2 tbsp. neutral oil such as canola oil
- ½ cup chocolate chips + more for topping if desired
- ½ cup Oreo crumbs + larger pieces for topping if desired
- Preheat oven to 350 degrees Fahrenheit. Spray an 8 x 8 baking dish or pan with nonstick cooking spray and line with parchment paper for easy removal.
- In a medium bowl, whisk together sugar, flour, cocoa powder, and salt. Set aside.
- In a large bowl, whisk together butter, eggs, vanilla extract, and oil.
- Add dry ingredients to wet ingredients and fold until just combined.
- Add chocolate chips and Oreo crumbles and fold them in.
- Spread the brownies in the prepared ban. Bake for 35-45 minutes until a toothpick inserted into the center comes out almost clean. You want them to still have a very fudgy consistency since they will continue to cook in the pan after taking them out of the oven.
- Allow to cool completely before removing from pan and serving.
- Serve with a tall glass of milk or a scoop of ice cream.
