Cookies and Cream Brownies

Ingredients
  • 1½ cups granulated sugar
  • ¾ cup all-purpose flour
  • ⅔ cup cocoa powder
  • ½ tsp. salt
  • ½ cup melted and cooled butter
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 tbsp. neutral oil such as canola oil
  • ½ cup chocolate chips + more for topping if desired
  • ½ cup Oreo crumbs + larger pieces for topping if desired
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray an 8 x 8 baking dish or pan with nonstick cooking spray and line with parchment paper for easy removal.
  2. In a medium bowl, whisk together sugar, flour, cocoa powder, and salt. Set aside.
  3. In a large bowl, whisk together butter, eggs, vanilla extract, and oil.
  4. Add dry ingredients to wet ingredients and fold until just combined.
  5. Add chocolate chips and Oreo crumbles and fold them in.
  6. Spread the brownies in the prepared ban. Bake for 35-45 minutes until a toothpick inserted into the center comes out almost clean. You want them to still have a very fudgy consistency since they will continue to cook in the pan after taking them out of the oven.
  7. Allow to cool completely before removing from pan and serving.
  8. Serve with a tall glass of milk or a scoop of ice cream.
