This cinnamon crunch coffee cake was almost a baking fail. I had this vision of a beautiful coffee cake with streusel topping to share before Mother’s Day, and as I watched this cake bake in the oven I knew I’d have to do another test of it. When I pulled it from the oven I could tell that it wasn’t inedible and cut myself a slice and was blown away! The crunchy cinnamon sugar topping immediately reminded me of the cinnamon crunch bagels at Panera, which I love.
The cake is the perfect buttery texture, and the cinnamon topping is just delicious. Topped with a dusting of powdered sugar, this is exactly what you want to enjoy first thing in the morning with a cup of coffee or tea. Trust me, you want this for brunch. Your mom probably wants it for Mother’s Day brunch too.
This cake is delicious at room temperature, but for a real treat you should toss it in the microwave for 30 seconds or so. When I tested this recipe, I was finishing up photographing it after my kids woke up from their afternoon naps. The boys begged to have some, and I told them that they could each have a small piece if they ate all their dinners. Needless to say, they both cleared their plates, devored their cake, and chanted “Cake! Cake! Cake!” wanting more. Clearly they are my kids.
Go ahead and plan for people to ask for this recipe, it’s irresistible!
- ½ cup butter, softened
- ¾ cup brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- 1 cup plain Greek yogurt
- 2½ cups all-purpose flour
- 2 tsp. baking powder
- ½ tsp. salt
- ½ cup milk
- ½ cup butter, softened
- 1 tbsp. cinnamon
- ¾ cup brown sugar
- ¼ cup flour
- ⅛ tsp. salt
- Preheat oven to 350 degrees Fahrenheit.
- Using a stand mixer or a hand mixer, cream together butter and sugars. Add eggs, one at a time, beating well after each addition. Add extracts and Greek yogurt and beat again until well combined.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Add dry ingredients to wet ingredients and mix until just combined. Add milk and mix until just combined.
- Spray a 9 inch springform pan with nonstick cooking spray and set on a large rimmed baking sheet (to prevent any leakage onto the floor of your oven). Pour the batter into the prepared pan.
- In a small bowl combine butter, cinnamon, brown sugar, flour, and salt for the streusel topping. It will look like wet sand.
- Sprinkle the streusel topping over the cake batter.
- Bake for 45-50 minutes until a toothpick inserted into the center comes out clean. The streusel topping will melt a bit, but that's exactly what you want! It'll give your cake a crunchy and sweet cinnamon topping.*
- Let cool for at least 15 minutes before removing the outside of the pan.
- Top with sifted powdered sugar and serve!
