Welcome back to day two of cookie week! In case you missed it, the first recipe was chocolate caramel snowball cookies. This second recipe is one of the easiest of the bunch and a perfect one to make with kids. These Christmas cookie bars use melted butter, which means you don’t need to wait for butter to soften and require no chilling time. They’re a great one to make with your kids! If you have enough time to brown the melted butter, it really deepens the flavor and brings out some nutty caramel notes. Studded with M&M candies, they’re a festive addition to any cookie box.
Here’s what you need to make these Christmas cookie bars:
- Flour
- Cornstarch
- Baking Soda
- Salt
- Melted Butter
- Brown Sugar
- Granulated Sugar
- Eggs
- Vanilla Extract
- M&M Candies (although chocolate chips will also work in a pinch!)
Once your butter is melted and browned, whisk it together with the brown sugar and granulated sugar. Then add the eggs and vanilla extract and mix until very smooth. In a separate bowl, mix together the flour, cornstarch, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until combined. Add the M&M candies and your batter is good to go! Spread it in a pan sprayed with nonstick cooking spray and lined with parchment paper. Top with some extra M&Ms before baking. - 2¾ cups all-purpose flour
- 2 tsp. cornstarch
- 1 tsp. baking soda
- ¼ tsp. salt
- 1 cup butter, melted, browned, and cooled
- 1 cup packed dark brown sugar
- ½ cup granulated sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1½ cups M&M candies + more for topping
- Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 baking pan with nonstick cooking spray and line with parchment paper. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt. Set aside.
- In a large bowl, whisk the browned butter together with the brown sugar and granulated sugar. Add the eggs and vanilla extract and mix until very smooth.
- Add the dry ingredients to the wet ingredients and mix to combine. Add the M&M candies and mix again.
- Pour the batter into the prepared pan and top with extra M&Ms. Bake for 20-30 minutes until golden brown and set.
- Let cool completely in the pan before slicing and serving. Enjoy!
