The time between Christmas and New Years always feels a bit like an endless party. Christmas decorations are still up, kids are home from school, and it feels like one big holiday. I am more of a morning person than a night owl, but when it comes to the end of December, sometimes I will push my bedtime in favor of a Christmas movie and some hot cocoa or homemade eggnog. And when I stay up late, I need an extra tasty breakfast the next day, like these chorizo and egg breakfast tacos.
Do breakfast tacos really need a recipe? Maybe not. But using chorizo is really what makes these tacos. Chorizo sausage and soft-scrambled eggs wrapped in a flour tortilla and topped with ripe avocado and green onion? That’s a perfect breakfast if I’ve ever seen one. You can also add some hot sauce, homemade salsa, cilantro, or sour cream as a topping. Dare I say that I like these chorizo and egg breakfast tacos even more than regular tacos? That may be so.
Avocado is my personal favorite topping for these breakfast tacos! It just pairs so well with the chorizo and should not be skimped on. Whether your New Years Eve plans involve a late night out with a fancy dress and lots of cocktails, or takeout Chinese food on the couch in sweatpants and a 10pm bedtime (my plans), these chorizo and egg breakfast tacos are the perfect New Years Day breakfast.
- 1 lb.chorizo sausage
- 2 tbsp. butter
- 8 eggs
- 2 tbsp. milk
- ½ tsp. salt
- ¼ tsp. pepper
- ½ tsp. garlic powder
- ½ tsp. onion powder
- 1 ripe avocado
- 6 green onions, sliced
- Tortillas for serving
- Optional other toppings: sour cream, salsa, fresh cilantro, shredded cheese, or hot sauce
- Heat a large skillet over medium heat and add chorizo. Cook until browned and cooked through, breaking up into pieces with a spatula as it cooks. Once cooked, set aside and wipe out with the skillet with a paper towel.
- Melt butter in the skillet over low heat. In a medium bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder. Pour eggs into the skillet and cook until scrambled. To do this, use a spatula to push from the edge of the pan to the center as the eggs cook until they are fully cooked.
- Serve sausage and eggs in a tortilla, topped with avocado and sliced green onion. Other toppings include salsa, shredded cheese, sour cream, hot sauce, or fresh cilantro.
