Instructions
Heat a large skillet over medium heat and add chorizo. Cook until browned and cooked through, breaking up into pieces with a spatula as it cooks. Once cooked, set aside and wipe out with the skillet with a paper towel.
Melt butter in the skillet over low heat. In a medium bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder. Pour eggs into the skillet and cook until scrambled. To do this, use a spatula to push from the edge of the pan to the center as the eggs cook until they are fully cooked.
Serve sausage and eggs in a tortilla, topped with avocado and sliced green onion. Other toppings include salsa, shredded cheese, sour cream, hot sauce, or fresh cilantro.
