Happy Monday! I love tarts because they are so pretty and delicious, plus it’s easy to make a no-bake version. This chocolate cream tart is dairy-free and gluten-free with one substitution. It would even be vegan except for the honey! I love everything about this chocolate cream tart, from the pretzel crust to the silky chocolate filling that you wouldn’t believe is free of eggs and dairy.
I wanted to share a sweet treat today because it’s actually going to be the only recipe that I share this week! Kevin is gone for military training and I’m taking the kids to the Oregon coast along with a girlfriend and her three kids. It’ll be a little chaotic and a lot of fun, and I’m happy to have something fun to do while we’re all missing Kevin. It’ll be like a little vacation! I haven’t been to the Oregon coast in years and I’m so excited to see the stunning landscape again.
You certainly don’t have to top this tart with strawberries, but who doesn’t love a chocolate-covered strawberry? Topping this tart with strawberries brings it to the next level. It’s the perfect dessert to enjoy anytime you’re craving a treat that just so happens to be on the heatlhy side.
- 7 oz. extra-firm tofu
- ½ cup cocoa powder
- ½ cup honey
- 1 tsp. vanilla
- Pinch of salt
- 4 oz. semi-sweet chocolate, melted
- 3 tbsp. coconut sugar
- ½ cup coconut milk
- 2½ cups crushed pretzel crumbs (sub gluten-free if desired) *
- ½ cup coconut oil
- 2 tbsp. coconut sugar
- Place the tofu between two towels and place something heavy on top to remove excess moisture.
- In a small bowl, mix together pretzel crumbs, coconut oil, and coconut sugar. Press the mixture into a 9 inch tart shell and refrigerate for 30 minutes.
- Place tofu, cocoa powder, honey, vanilla, salt, melted chocolate, and coconut sugar and blend until smooth. Drizzle in the coconut milk while it's blending and blend until smooth.
- Pour the chocolate mixture into the prepared tart shell. Refrigerate for 4 hours or until firm.
- Top with sliced strawberries if desired, slice, and serve. This tart should be refrigerated until ready to serve.
