When it comes to side dishes, I feel like a lot of us have a dilemma. Generally we want to spend the most time on our main dishes, but that doesn’t mean we want our side dishes to not be delicious and compliment the main dish well! This cheesy roasted asparagus is so easy with just minutes of prep. It’s easy to toss in the oven while you spend your time on other things, and it is perfect for your Easter dinner.
When it comes to holidays, Thanksgiving takes the cake for the most time-intensive dishes. Turkey takes forever to cook in the oven, and stuffing and mashed potatoes take their own chunk of time. And making pies from scratch? Don’t even get me starting. Thanksgiving dinner is a two-day process for me. Christmas is easier, and Easter is even easier than that! This year we are hosting two other families and will have 9 kids in the house. They’re each bringing a side dish, Kevin is smoking the ham, and I’m responsible for everything else. BUT that is still not a lot of work. And with this cheesy roasted asparagus my job is even easier.
While this cheesy roasted asparagus is perfect for Easter, I also plan to make it for Mother’s Day to enjoy alongside my traditional steak dinner that Kevin grills for me. Don’t let asparagus season pass you by without making this!
- 2 lbs. asparagus, washed and woody ends removed
- 3 tbsp. olive oil
- 1 tsp. salt
- 4 cloves garlic, minced
- Freshly ground black pepper
- 1¼ cups shredded cheddar cheese
- Preheat oven to 400 degrees Fahrenheit and line a rimmed baking sheet with aluminum foil.
- Spread asparagus on the prepared pan.
- In a small bowl, mix together olive oil, salt, and garlic. Brush over asparagus and make sure it's well coated.
- Grind black pepper over the asparagus and spread cheese over it.
- Bake for 15 minutes until tender.
- Serve and enjoy!
