Let’s just all go ahead and agree that this chowder combines some of the best things in life. Buffalo sauce and cheddar cheese. It seems natural that these flavors belong together in a chowder. Add chicken, potatoes, and sweet corn and you have a match made in heaven.
I’m not a huge fan of any food that’s too spicy, and I’ve never been someone who drizzles hot sauce on my food, BUT I make a huge exception for buffalo sauce. I absolutely love wings (dipped in ranch, of course), and there’s a place in the town I grew up in that makes the absolute best buffalo wings. Even Kevin agrees, and we make a stop there anytime we’re back in the Chicago area. Just thinking about those wings makes me crave them.
I do make a mean homemade buffalo wing that I’ll get on the blog someday, but they’ve got nothing on those wings that I grew up on. For now, to satisfy my buffalo craving, we’ve got this cheesy buffalo chicken chowder. And let me tell you, it is absolutely delicious! It truly makes me wish I had tried this delicious combination sooner because we gobbled it up. If you’re giving it to kids, you can certainly modify the amount of buffalo sauce that you use or set some aside for them before adding it, which is what I always do when I’m concerned food will be too spicy for my kids.
I know I’m sharing another recipe with meat in it on a Friday during Lent for those of you who abstain from it, but if you’re like me and do your grocery shopping on Friday, you can make sure you add this to your meal plan for next week!
- 2 tbsp. oil
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 3 tbsp. flour
- 2 large russet potatoes, peeled and chopped
- 2 cups milk (I used whole)
- 4 cups chicken broth
- ⅓ cup buffalo sauce (I like Frank's Red Hot Buffalo)
- 1 can yellow corn, drained
- 1 tsp. salt
- ¼ tsp. ground black pepper
- 2 cups cooked shredded chicken
- 1½ cups shredded cheddar cheese
- Heat oil in a large pot. Add onions and garlic and cook until tender. Stir in flour.
- Add potatoes, milk, chicken broth, buffalo sauce, corn, salt, and pepper. Bring to a simmer and cook until potatoes are tender.
- Add chicken and cheese and stir until cheese is melted.
- Serve topped with sliced green onions, more shredded cheese, or extra buffalo sauce!
