A few weeks ago, a girlfriend texted me and raved about a cauliflower Caesar salad that she had at a restaurant and I was intrigued by the concept. I’m a big fan of using raw cauliflower and broccoli in salads for a healthy crunch, and pairing a Caesar dressing with it seems genius. This cauliflower Caesar salad is for anyone who eats a lot of salads, but is looking to shake up their routine, or anyone who just wants something extra delicious.
I love a good crisp Caesar salad with its classic ingredients: romaine lettuce, croutons, and parmesan cheese, all topped with creamy and tangy Caesar dressing. I will be honest, the only thing this salad has in common with a traditional Caesar salad is the dressing. But I’ll tell you that all the substitutions are truly delicious, and this makes a hearty salad worth enjoying as a meal all on its own.
This cauliflower Caesar salad is definitely one that you’ll take a bite of, think it tastes interesting, then take bite after bite until the whole salad is gone. Trust me! If you’re looking to add protein to this salad, shredded chicken is an obvious choice, but I also really like this salad with chickpeas.
Go ahead, try this salad, it’s going to make regular appearances in your lunch rotation!
- ½ small head cauliflower
- 5-6 handfuls arugula
- 4 oz. sliced green olives
- 1 pint cherry tomatoes, halved
- ¼ cup red onion, diced
- ¾ cup mayonnaise
- ¼ cup olive oil
- 2 tbsp. lemon juice
- 1 tbsp. Worcestershire sauce
- ½ tsp. salt
- ½ tsp. garlic powder
- ¼ tsp. freshly ground black pepper
- Prepare the cauliflower. I like having some pieces in small bite-sized pieces and others in thin slices for a good variation.
- Place cauliflower, arugula, olives, tomatoes, and red onion in a large bowl. Toss to combine.
- In a small bowl, whisk together mayonnaise, olive oil, lemon juice, Worcestershire sauce, salt, garlic powder, and pepper.
- Drizzle dressing over salad and toss to combine.
- Serve immediately. If not enjoying immediately, keep the dressing and salad stored separately.
