Cauliflower Caesar Salad

Ingredients
  • ½ small head cauliflower
  • 5-6 handfuls arugula
  • 4 oz. sliced green olives
  • 1 pint cherry tomatoes, halved
  • ¼ cup red onion, diced
  • ¾ cup mayonnaise
  • ¼ cup olive oil
  • 2 tbsp. lemon juice
  • 1 tbsp. Worcestershire sauce
  • ½ tsp. salt
  • ½ tsp. garlic powder
  • ¼ tsp. freshly ground black pepper
Instructions
  1. Prepare the cauliflower. I like having some pieces in small bite-sized pieces and others in thin slices for a good variation.
  2. Place cauliflower, arugula, olives, tomatoes, and red onion in a large bowl. Toss to combine.
  3. In a small bowl, whisk together mayonnaise, olive oil, lemon juice, Worcestershire sauce, salt, garlic powder, and pepper.
  4. Drizzle dressing over salad and toss to combine.
  5. Serve immediately. If not enjoying immediately, keep the dressing and salad stored separately.
  6. Enjoy!
