What’s your favorite summer produce? There are so many delicious options: berries, watermelon, and peaches top the list for me when it comes to fruit. But topping all of those is probably a juicy summer tomato, especially when paired with fresh basil. Gracing my countertops all summer long you can find tomatoes in all shapes and sizes to be sliced and enjoyed anytime of day. I love a dish like this where they can really shine. Caprese polenta comes together in less than 30 minutes and is the perfect summer meal.
When Kevin and I honeymooned at Lake Como, Italy, we had caprese salad every single day. Our hotel had an incredible daily breakfast included in our stay, and we explored the area at night for some delicious dinners. During the day, we wandered the various towns around the lake and would stop for caprese salad and gelato every day for lunch. I never got sick of it! It seemed like we were living in a dream, enjoying delicious food in perfect weather with the most stunning views. Caprese salad is so simple, but it’s perfect in its simplicity.
Polenta is a staple in my pantry. It cooks very quickly and can be a vehicle for whatever you want! Leftover Bolognese sauce? Sounds good! Wilted greens and crispy bacon? Perfect! Fresh tomatoes, basil, and a balsamic drizzle? Looks like the perfect summer dinner to me!
Next time you’re at your local farmer’s market, pick up a pint of cherry tomatoes and some fresh basil and add this to your meal plan!
- 3 cups water
- 1 cup dry polenta
- ¼ cup grated parmesan cheese
- ½ cup shredded mozzarella cheese
- ½ tsp. salt
- ¼ tsp. ground black pepper
- 1 pint cherry tomatoes, halved
- ½ cup thinly sliced fresh basil leaves
- 4 tbsp. balsamic vinegar
- Bring water to a boil and add polenta. Reduce heat to low, whisking constantly, until fully cooked and thickened.
- Add parmesan cheese, mozzarella cheese, salt, and pepper. Whisk to combine and remove from heat.
- Divide polenta into two bowls and top with cherry tomatoes and basil.
- Drizzle with balsamic vinegar and serve immediately.
