Caprese Polenta

Ingredients
  • 3 cups water
  • 1 cup dry polenta
  • ¼ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 1 pint cherry tomatoes, halved
  • ½ cup thinly sliced fresh basil leaves
  • 4 tbsp. balsamic vinegar
Instructions
  1. Bring water to a boil and add polenta. Reduce heat to low, whisking constantly, until fully cooked and thickened.
  2. Add parmesan cheese, mozzarella cheese, salt, and pepper. Whisk to combine and remove from heat.
  3. Divide polenta into two bowls and top with cherry tomatoes and basil.
  4. Drizzle with balsamic vinegar and serve immediately.
