When it comes to dessert, I almost always need to have chocolate in it. Sure, once in a while I enjoy a fruity or vanilla dessert, but my favorites always have chocolate in them. Kevin tends to prefer desserts that are less on the chocolate side, but one time we can meet in the middle is for chocolate chip cookies. These brown butter chocolate chip blondies are like chocolate chip cookies more decadent cousin, and they are perfect to enjoy for any occasion.
A lot of chocolate chip cookies require softened butter, but when you NEED a chocolate chip cookie, you need one. Thankfully, these use melted, browned butter. That means you can make them whenever the craving strikes. These do need to cool in the pan for a little while if you can make it that long, but I promise you’ll be rewarded with the most delicous, gooey treat.
These amazing blondies didn’t last long in our house, and I’m sure they won’t last long in yours either. They are great paired with some vanilla ice cream, but are also delicious all by themselves. Browning the butter in these blondies takes them from ordinary to extraordinary with the nuttiness of the browned butter.
So go ahead and make these, you deserve it!
- ½ cup unsalted butter
- 1 cup packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 1¼ cups all-purpose flour
- ¼ tsp. salt
- ¾ tsp. baking powder
- ½ cup chocolate chips
- Preheat oven to 350 degrees Fahrenheit. Spray an 8 x 8 baking dish with nonstick cooking spray and line with parchment paper.
- Melt butter in a medium saucepan over low heat. Keep an eye on it as it starts to brown. You'll start to smell a nutty flavor and see browned bits of butter in the pan. Be careful not to burn it! Remove from heat.
- While the butter is cooling, whisk together the flour, salt, and baking powder in a medium bowl.
- Once the butter has cooled, whisk the brown sugar into it. Add the vanilla and egg and whisk again.
- Add the dry ingredients to the wet ingredients and whisk to combine.
- Fold the chocolate chips into the batter. You can save some of the chocolate chips for the top if you want, or you can mix all of them in.
- Bake for 25 minutes. The center will still appear to be a bit loose, but it will firm up during cooling.
- Allow to cool for at least 30 minutes before removing from the pan, but ideally closer to 1-2 hours.
- Cut into pieces and enjoy!
