Serves: 9-12 blondies

Ingredients
  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1¼ cups all-purpose flour
  • ¼ tsp. salt
  • ¾ tsp. baking powder
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray an 8 x 8 baking dish with nonstick cooking spray and line with parchment paper.
  2. Melt butter in a medium saucepan over low heat. Keep an eye on it as it starts to brown. You'll start to smell a nutty flavor and see browned bits of butter in the pan. Be careful not to burn it! Remove from heat.
  3. While the butter is cooling, whisk together the flour, salt, and baking powder in a medium bowl.
  4. Once the butter has cooled, whisk the brown sugar into it. Add the vanilla and egg and whisk again.
  5. Add the dry ingredients to the wet ingredients and whisk to combine.
  6. Fold the chocolate chips into the batter. You can save some of the chocolate chips for the top if you want, or you can mix all of them in.
  7. Bake for 25 minutes. The center will still appear to be a bit loose, but it will firm up during cooling.
  8. Allow to cool for at least 30 minutes before removing from the pan, but ideally closer to 1-2 hours.
  9. Cut into pieces and enjoy!
