I am always trying to minimize food waste, and one thing that drives me crazy is when a lot of an item needs to be discarded. I like to use my chicken bones and make homemade chicken broth, take my sourdough discard and turn them into muffins, biscuits, or another baked good. We eat a lot of broccoli in our house because it’s one of my husband’s favorite vegetables, and every time I throw away the broccoli stalks I wish I could use them for something else. When we had babies eating baby food, I’d throw them in with their purees, but now that we are past that phase I needed another idea. This broccoli slaw is the perfect way to use up those leftover broccoli stalks. With a lot of crunchy veggies and a creamy, tangy dressing, it’s the perfect summer side dish.
Start by shredded your broccoli stalks in the food processor. You can also use the large side of a box grater or cut them by hand, but I find that the food processor with the shredding attachment is easiest. I used about 5 broccoli stalks but this recipe easily handles more if you have more to use up. Add these to a large bowl with shredded carrots, red cabbage, red onion, and dried cranberries. In a separate small bowl whisk together mayonnaise, apple cider vinegar, salt, Dijon mustard, pepper, and garlic powder. That’s it! Pour this delicious dressing over the slaw and toss to combine. Top with additional dried cranberries and fresh chives if desired for the perfect summer side that minimizes food waste. This would also be delicious paired with some pulled pork and piled high on a sandwich!

- 4-6 broccoli stalks
- 3 carrots
- ½ a small purple cabbage
- ⅓ cup chopped red onion
- ¾ cup dried cranberries
- ¼ cup mayonnaise
- ¼ cup apple cider vinegar
- ½ tsp. salt
- 1 tbsp. Dijon mustard
- ½ tsp. freshly ground black pepper
- ½ tsp. garlic powder
- Fresh chives and additional dried cranberries for topping, optional
- Shred your broccoli stalks using a food processor. If you don't have a food processor, you can also use a box grater. Place in a large bowl. Peel and shred your carrots using the same method and place in the bowl. Shred or chop your cabbage and add it to the large bowl.
- Add the red onion and dried cranberries to the bowl and mix to combine.
- In a small bowl whisk together the mayonnaise, apple cider vinegar, salt, mustard, pepper, and garlic powder. Once it's mixed together, pour it over your vegetables and toss to combine.
- Top with fresh chives and additional dried cranberries, if desired.
