Broccoli Slaw

Ingredients
  • 4-6 broccoli stalks
  • 3 carrots
  • ½ a small purple cabbage
  • ⅓ cup chopped red onion
  • ¾ cup dried cranberries
  • ¼ cup mayonnaise
  • ¼ cup apple cider vinegar
  • ½ tsp. salt
  • 1 tbsp. Dijon mustard
  • ½ tsp. freshly ground black pepper
  • ½ tsp. garlic powder
  • Fresh chives and additional dried cranberries for topping, optional
Instructions
  1. Shred your broccoli stalks using a food processor. If you don't have a food processor, you can also use a box grater. Place in a large bowl. Peel and shred your carrots using the same method and place in the bowl. Shred or chop your cabbage and add it to the large bowl.
  2. Add the red onion and dried cranberries to the bowl and mix to combine.
  3. In a small bowl whisk together the mayonnaise, apple cider vinegar, salt, mustard, pepper, and garlic powder. Once it's mixed together, pour it over your vegetables and toss to combine.
  4. Top with fresh chives and additional dried cranberries, if desired.
  5. Enjoy!
