My garden is exploding with mint. Anyone who has ever planted mint knows that it just takes over, and it’s recommended to even plant it in it’s own pot. Well, I haven’t learned that lesson so my mint just has its own private corner of the garden with my other less-dominant herbs. But what do you do with an abundance of mint? Sure you can make a mint pesto, or add some mint leaves to your water to make it extra refreshing, but there really aren’t a ton of minty options. Except for mojitos. And these blueberry ginger mojitos are your new favorite drink.
First off, let’s look at that color. In this case, this drink absolutely tastes as good as it looks. Blueberries pair so well with the mint you find in classic mojitos and give your cocktail a pretty color. But in addition to blueberry and mint flavors, we also have ginger. Traditional mojitos use club soda for carbonation and some sugar for sweetness. I substituted both of those ingredients with ginger beer. I always have ginger beer in my refrigerator because i love Moscow mules. The ginger flavor in these mojitos is subtle, but there’s enough to let you know that it’s something special.
I will be honest, this week has been a bit long and one (or two) of these blueberry ginger mojitos is exactly what I need. My 9 month old has her first ear infection, I’m potty training my 2.5 year old, and my 4 year old clearly wants a bit more attention than he’s getting since I’m tied up with his siblings. But alas! - 2 cups fresh blueberries
- 50 (or more!) fresh mint leaves + more for serving
- 4 limes, juiced
- 1 cup white rum
- 12 oz. ginger beer
- Using a glass and working in batches, muddle blueberries and mint leaves. If you're crunched for time, you can pulse the mint and blueberries in a food processer.
- Strain the blueberry mint juice into a large pitcher. Use a spoon to press down on the blueberry-mint mixture to make sure you get as much juice as possible.
- Add lime juice and rum and stir to combine.
- Add ginger beer and stir gently.
- Serve over ice with additional fresh mint leaves.
