Blueberry Ginger Mojitos

Ingredients
  • 2 cups fresh blueberries
  • 50 (or more!) fresh mint leaves + more for serving
  • 4 limes, juiced
  • 1 cup white rum
  • 12 oz. ginger beer
Instructions
  1. Using a glass and working in batches, muddle blueberries and mint leaves. If you're crunched for time, you can pulse the mint and blueberries in a food processer.
  2. Strain the blueberry mint juice into a large pitcher. Use a spoon to press down on the blueberry-mint mixture to make sure you get as much juice as possible.
  3. Add lime juice and rum and stir to combine.
  4. Add ginger beer and stir gently.
  5. Serve over ice with additional fresh mint leaves.
