Have you ever tried chia pudding? I tried chia pudding for the first time a few years ago and was pleasantly surprised. It's not as smooth as traditional pudding because the chia seeds add a bit of a crunch, but it is just as delicious! Maple Almond Granola
One of my favorite things is homemade granola and plain Greek yogurt with some fruit. It's so simple to make and to customize that my kids can make it relatively unsupervised. One of them mixed the wet ingredients while another one mixed the dry ingredients, and then they watch as it cooked in the oven.
