Tomatoes might be my favorite produce of summer. I love summer berries, peaches, and sweet corn, but I'm not sure there's anything better than a vine-ripened summer tomato. This super easy dish is inspired by what I ate for breakfast every single day while I was deployed. I would wake up early to go to the gym, and then I would have a bagel with cream cheese and sliced tomato, sprinkled with salt and pepper, with a side of fruit. I also had a salad every day for lunch. I'm not sure what ... continue reading...
Bend, Oregon Family Vacation
Over Labor Day weekend we took our first vacation as a family of four to Bend, Oregon! Kevin and I first wanted to go to Bend a few years ago for Valentine's Day but were turned around due to snow. We were so happy to make this trip with our boys because it is such a fun town with a lot of family-friendly activities. As much fun as we had, this trip almost didn't happen. The kids had a stomach virus the week before the trip, which conveniently they gave to me the day before we left. ... continue reading...
Chai Cinnamon Roll Bread
Hello to the perfect breakfast bread. I'm trying not to exaggerate, but it really is that good! I'm a huge fan of chai tea and chai tea lattes, but I haven't had caffeine since I was pregnant with our first child (with the exception of when I run ultramarathons) and it's hard to find a place that makes a decaf chai tea latte! Jalapeno Artichoke Parmesan Dip
Football season is upon us, which means game day snacks are upon us. I'm not a big fan of watching sports on TV, but I am a big fan of entertaining and putting out a spread of food. This dip is my new favorite thing to put out while entertaining. Spinach and artichoke dip is a classic, but adding jalapeño brings it to a new level. Jalapeno artichoke parmesan dip is an appetizer that will not last long! This dip is inspired by one that you can buy at Costco. I am a huge fan of Costco and ... continue reading...
Fried Green Tomato Po’ Boys with Old Bay Aioli
Let's talk about po' boys. First off, they are delicious! A giant bun stuffed with some type of meat, usually fried, along with some lettuce and tomato and drizzled with a delicious sauce. Who can resist that? They hail from Louisiana and are traditionally made with shrimp. But Kevin is allergic to shellfish, and I decided to give another southern twist to an already southern dish: fried green tomatoes. I don't know who had the idea at first to fry green tomatoes. Maybe they thought that ... continue reading...
