On weekdays my routine almost always looks the same. I wake up at 5am and head downstairs to our garage gym to work out until about 6am. I always try to be showered and ready for the day by 6:30 am to give me another 30 minutes until the kids wake up. During this time I unload the dishwasher, get the kids breakfast ready, and try to get a few bites of my own breakfast before the kids wake up at 7. If I have a breakfast that’s ready to go like these blender apple spice muffins, it means that I have a little more “me time” to read and enjoy my own breakfast before the kids wake up. And that is a good start to the day!
There are a lot of apple spice muffins on the internet, and I love a good bakery-style muffin full of butter and sugar. But sometime I’m looking for a healthier breakfast option for my family and I. I hate calling butter and sugar “unhealthy” because I don’t believe there are any bad foods, BUT sometimes when my kids want to have three muffins each for breakfast, I do feel better giving them endless muffins with these ingredients. These muffins are naturally-sweetened, have no butter, and are completely dairy free. Made with rolled oats and whole wheat flour and lots of warm fall spices, they’re the perfect healthy breakfast to enjoy right now.
My favorite way to enjoy these blender apple spice muffins is warmed up in the microwave with a little bit of butter. Of course, that means they aren’t dairy-free anymore, but it is certainly a delicious way to enjoy them. They’re also great with a smear of peanut butter or almond butter! Since these muffins are made in the blender, they are so easy to make and cleanup is a breeze. Be sure to follow my instructions below for the order in which to add the ingredients; if you put the dry ingredients in first you could have a harder time blending your muffins.
I use a high-speed blender to make these muffins and because that’s the only blender I have, I couldn’t test them in a regular blender. But I have found that you can frequently use a food processor instead of a high-speed blender so I would recommend that. I hope you enjoy these easy and delicous muffins!
- 2 eggs
- 1 tsp. vanilla extract
- ½ cup pure maple syrup
- ¼ cup almond milk
- ¼ cup olive oil or melted and cooled coconut oil
- ½ cup whole wheat flour
- 1½ cups rolled oats
- ¼ tsp. salt
- 2½ tsp. baking powder
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ¼ tsp. ground ginger
- ¼ tsp. cloves
- 1½ cups chopped apple (about 1 medium-sized apple)
- Preheat oven to 350 degrees Fahrenheit. Spray a standard 12 cup muffin pan with non-stick cooking spray. In a high speed blender, add eggs, vanilla, maple syrup, almond milk, oil, flour, oats, salt, baking powder, cinnamon, nutmeg, ginger, and cloves. It's important to add the ingredients in this order or you could have issues blending everything smoothly.
- Add the chopped apple and pulse until the desired consistency is reached. The more you blend, the smaller the pieces of apple will be in the muffins.
- Evenly divide the batter in the muffin pan.
- Bake for 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
- Let cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
