Blender Apple Spice Muffins

Ingredients
  • 2 eggs
  • 1 tsp. vanilla extract
  • ½ cup pure maple syrup
  • ¼ cup almond milk
  • ¼ cup olive oil or melted and cooled coconut oil
  • ½ cup whole wheat flour
  • 1½ cups rolled oats
  • ¼ tsp. salt
  • 2½ tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. ground ginger
  • ¼ tsp. cloves
  • 1½ cups chopped apple (about 1 medium-sized apple)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a standard 12 cup muffin pan with non-stick cooking spray. In a high speed blender, add eggs, vanilla, maple syrup, almond milk, oil, flour, oats, salt, baking powder, cinnamon, nutmeg, ginger, and cloves. It's important to add the ingredients in this order or you could have issues blending everything smoothly.
  2. Add the chopped apple and pulse until the desired consistency is reached. The more you blend, the smaller the pieces of apple will be in the muffins.
  3. Evenly divide the batter in the muffin pan.
  4. Bake for 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
  5. Let cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
