We’ve all had that moment. Maybe it’s 10:30 in the morning and it’s too early to dive into your lunch at work, or maybe it’s 4pm and you’re searching through the pantry to snack on while your kids run around like lunatics and you’re wondering what to feed them for dinner. You need a healthy snack. One that’s easy to make, one that you can make in advance, and one that’s healthy but also delicious. Enter birthday cake protein bites.
I always keep some type of energy bite in my refrigerator. They’re so easy to whip up at the beginning of the week for me to grab on our way out the door when I know I’ll need a little snack, or for my kids to enjoy as a healthy treat. A lot of energy bites or protein bites have chocolate in them, which I love, but I wanted to do something a little different and a little fun. Who doesn’t love funfetti birthday cake?
The key to the birthday cake flavor in these protein bites is vanilla protein powder. This is the protein powder that I used for this recipe and is a current staple in my pantry, but this is another type that I really love. Any vanilla protein powder should work well, so go ahead and use your favorite. This post isn’t sponsored, but I’ve been a fan of Vega products for years. These birthday cake protein bites are great for kids too, because who doesn’t love sprinkles? Plus since they’re naturally sweetened and have good-for-you ingredients in them, they are a great snack for anyone in your family to enjoy.
- 1 cup old-fashioned rolled oats
- ¼ cup vanilla protein powder
- ½ tsp. almond extract
- ½ tsp. vanilla extract
- ⅓ cup honey
- 3 tbsp. natural peanut butter
- 2 tbsp. flaxseed meal
- 2 tbsp. sprinkles + more for topping
- In a food processor, combine oats, protein powder, almond extract, vanilla extract, honey, peanut butter, and flaxseed meal. Blend until combined.
- Transfer mixture to a medium bowl and add sprinkles. Mix to combine.
- Roll into balls with your hands and top with additional sprinkles.
- Keep protein bites in an air-tight container in the refrigerator. Protein bites will keep for at least a week.
- Enjoy!

these were so good! I liked the ingredients a little more than some other protein bites (ie no coconut and the added flavor of almond extract) so I subbed in chocolate chips and made these for an after school snack and moms’ hike – everyone loved them!
