Birthday Cake Protein Bites

Serves: 12-14 energy bites
- 1 cup old-fashioned rolled oats
- ¼ cup vanilla protein powder
- ½ tsp. almond extract
- ½ tsp. vanilla extract
- ⅓ cup honey
- 3 tbsp. natural peanut butter
- 2 tbsp. flaxseed meal
- 2 tbsp. sprinkles + more for topping
- In a food processor, combine oats, protein powder, almond extract, vanilla extract, honey, peanut butter, and flaxseed meal. Blend until combined.
- Transfer mixture to a medium bowl and add sprinkles. Mix to combine.
- Roll into balls with your hands and top with additional sprinkles.
- Keep protein bites in an air-tight container in the refrigerator. Protein bites will keep for at least a week.
