You know when you go out to eat and you order a side salad to start the meal, and it’s just the perfect little green salad? This is that salad. It’s the salad you want to serve when you entertain, maybe alongside a big pan of lasagna. I have plenty of hearty salads on the blog, salads meant to be an entire meal. But sometimes you want a perfect little green salad to serve alongside a larger cozy meal. This is also the perfect salad for pizza night!
I kept it simple with this salad: spring mix green, red onion, grape tomatoes, homemade croutons, and a balsamic vinaigrette. You can certainly use store-bought croutons, but toasting up a few slices of stale bread with olive oil and garlic salt is an easy step to make this simple green salad even better. This salad is delicious enough to be the star of the show, but it’s easy and exactly what you want to serve with a larger meal. I want to eat this salad all summer long at our backyard picnic table with whatever Kevin cooks up on the grill.
This little green salad is your new favorite. Wait to put the dressing on and toss right before serving, then top with those crunchy, garlicky croutons. Just a few minutes to make, but this salad is the perfect compliment to any meal.
- 8 oz. spring green mix
- 1 pint cherry or grape tomatoes, halved
- ¼ cup red onion slices (about ¼ of a small red onion)
- 1½ cups cubed stale bread
- 1 tbsp. olive oil
- 2 tsp. garlic salt
- 4 tbsp. olive oil
- 4 tbsp. balsamic vinegar
- ½ tsp. salt
- ½ tsp. freshly ground black pepper
- In a large bowl, place spring green mix, tomatoes, and red onion. Cover and chill until ready to serve.
- Preheat oven to 375 degrees Fahrenheit. Place bread on a rimmed baking sheet and drizzle with olive oil, then sprinkle with garlic salt. Toss with your hands to evenly coat. Feel free to add more olive oil or garlic salt if needed! Bake for 10-12 minutes until golden brown.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- When ready to serve, drizzle prepared dressing over salad and toss to combine.
- Top with croutons and serve immediately.
