Best Ever Green Salad

Ingredients
Salad
  • 8 oz. spring green mix
  • 1 pint cherry or grape tomatoes, halved
  • ¼ cup red onion slices (about ¼ of a small red onion)
  • 1½ cups cubed stale bread
  • 1 tbsp. olive oil
  • 2 tsp. garlic salt
Dressing
  • 4 tbsp. olive oil
  • 4 tbsp. balsamic vinegar
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
Instructions
  1. In a large bowl, place spring green mix, tomatoes, and red onion. Cover and chill until ready to serve.
  2. Preheat oven to 375 degrees Fahrenheit. Place bread on a rimmed baking sheet and drizzle with olive oil, then sprinkle with garlic salt. Toss with your hands to evenly coat. Feel free to add more olive oil or garlic salt if needed! Bake for 10-12 minutes until golden brown.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. When ready to serve, drizzle prepared dressing over salad and toss to combine.
  5. Top with croutons and serve immediately.
