I don’t know why it took me so long to try a Moscow mule, but I don’t think I had my first one until a year or so ago! And now that I know how easy they are to make, I always have the ingredients on hand to enjoy as a weekend treat. Vodka, ginger beer, and lime juice are easy enough to combine to make into something delicious. The only thing that can make the classic cocktail even better is a hint of fall. These apple cider Moscow mules do just that.
With three kids under five years old and no family living near us, we are much more likely to have a night in than a night out. We do date night swaps with some friends of ours, and have no issue with hiring a babysitter, but most weekend events are spent on the couch enjoying a movie and cocktails that we made at home. And you know what? It doesn’t bother me one bit! This is the phase of life that we’re in and we are still enjoying quality time together.
Do you have a favorite cocktail? I love a from-scratch margarita in the summer and a Moscow mule anytime. Also when the mint in my garden is in full force I love a mojito! But anytime we do go out to dinner I’m a sucker for a fancy cocktail. Earlier this summer I was out with a girlfriend and had this amazing blueberry-elderflower-lavender concoction. Near our old apartment was a great cocktail and small plates restaurant that had some of the most unique and delicious cocktails I’ve ever had and I’m always looking for an opportunity to get back there!
These apple cider Moscow mules are a great way to enjoy a cocktail even when you can’t get out to a fancy restaurant. Hope you have a great weekend and enjoy this tasty drink sometime this fall!
- 1 cup vodka
- 1½ cups apple cider
- Juice of 1 lime
- 8 oz. ginger beer
- Sliced apples for serving
- Combine vodka, apple cider, and lime juice in a pitcher, stir to combine.
- Add ginger beer and carefully stir again.
- Serve with sliced apples. Enjoy!
