We have pancakes in our house almost every Saturday morning and I’m always looking for our next favorite pancake ready! With four hungry kids and two hungry adults, I’m looking for something easy, and it doesn’t get easier than these blender pancakes. They are full of good-for-you ingredients like rolled oats and Greek yogurt and will keep you full. They’re gluten-free and naturally sweetened, and perfect for topping with a generous drizzle of maple syrup or your favorite fruit toppings. You can even stir some berries, bananas, apples, or chocolate chips into the batter after blending to mix it up and give your family their favorite pancake options.
To make these blender pancakes, you need some easy pantry and refrigerator staples:
- Plain Greek yogurt
- Almond milk (but regular milk works too!)
- Eggs
- Coconut sugar (If they don’t need to be naturally sweetened, granulated sugar will work too, but I love the caramel notes of coconut sugar in these pancakes.)
- Vanilla extract and cinnamon for some warm and cozy flavors
- Baking powder
- Flaxseed meal
- Rolled oats
That’s it! All you need to do is blend the ingredients together until nice and smooth, let sit for a few minutes for the mixture to thicken, then fire up the griddle. If you’re going to add any fruit, nuts, or chocolate chips as pancake add-ins, simply stir them in after blending. Another bonus to making blender pancakes is that you can pour the batter right onto your griddle for minimal dishes. I like to use this high-speed blender for my blender pancakes.

- 1 cup plain Greek yogurt
- 1 cup almond milk
- 2 eggs
- 1 tsp. vanilla extract
- 3 tbsp. coconut sugar
- 3 cups rolled oats
- 1 Tbsp. baking powder
- 2 tbsp. flaxseed meal
- ½ tsp. cinnamon
- Oil for griddle for cooking
- Place all ingredients in a high-speed blender and blend until very smooth. For best results, put the liquid ingredients in the blender first and the dry ingredients afterwards.
- Allow the mixture to sit for 10-15 minutes to thicken slightly. You can cook it right away but your pancakes may not be as fluffy!
- If your adding any fruit, nuts, or chocolate chips to your pancakes, stir them in by hand after blending.
- Meanwhile, heat up your griddle and add some oil to prevent sticking.
- Pour the pancake batter onto the griddle and cook over medium-low heat until golden brown, then flip! You'll know when it's time to flip when you see bubbles on the top of the pancake.
- Repeat until all your pancakes are cooked.
- Serve warm with maple syrup, enjoy!
