It’s soup season! I could eat soup every night for dinner all fall and winter long. There are so many delicious and healthy soup and stew options, and the fact that I can frequently make them in the slow cooker or instant pot makes for an even easier meal. But to complete the meal, you really need something to dunk in your soup. I love making homemade sourdough to serve alongside soup and while it’s not difficult, it does require some planning. Rosemary garlic focaccia is an easy bread to make and so flavorful, plus perfect with soup.
Rosemary and garlic are the perfect ingredients to add to light and fluffy focaccia. I can’t think of a soup that this wouln’t pair well with, but if for some reason you want to leave these ingredients out or replace the rosemary with another herb, go crazy with it! I think this would also be delicious with sage, especially for dunking in fall’s pumpkin or butternut squash soups.
I promise, you will love everything about this bread. I served it to my kids with soup and they decided to only eat the bread, so I guess I should take that as a compliment! Plan to make this rosemary garlic focaccia bread to serve the next time you make soup.
- 1¼ cups warm water
- 2 tsp. sugar
- 1 package yeast
- 3¾ cups flour
- 4 tbsp. olive oil
- 2 tsp. salt
- 2 tbsp. chopped fresh rosemary
- 2 cloves garlic, minced
- 2 tbsp. melted butter
- In a large bowl or in the bowl of a stand mixer, combine warm water, sugar, and yeast. Let sit for 5-10 minutes to allow the yeast to bloom.
- Add flour, olive oil, salt, rosemary, and garlic, knead until smooth.
- Cover with plastic wrap and set in a warm place to rise for one hour until doubled in size.
- Preheat oven to 400 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
- Spread the dough using your fingers or a rolling pin until it's about 1 inch thick.
- Let dough rise for 30 minutes.
- Poke your fingers into the dough. Don't be shy! Poke all the way to the bottom and make sure there are plenty of holes.
- Bake for 25-30 minutes until the edges begin to brown. Immediately brush with melted butter while still warm.
- Allow to cool and cut into triangles. Top with additional fresh rosemary if desired.
