I haven’t always been a big fan of potato salad. I don’t care for the concept of cooking potatoes and then serving them cold with a mayonnaise-based dressing. I do like my bacon jalapeno gorgonzola potato salad because of all the other add-ins with it! But if I had to choose my favorite option to enjoy potatoes, they would be WARM. I also have a hard time scooping all that mayonnaise into the potato salad because I know I can come up with something more delicious (and maybe even healthier?). This warm potato salad with mustard and bacon is the way to go.
The dressing for this potato salad is what makes it so unique and delicious. Bacon is browned with red onion, then add apple cider vinegar and Dijon mustard for a summer side dish that’s bursting with flavor. Add some fresh chives from your garden to top the whole thing off, and you have an easy side dish that’s perfect for any summer BBQ. My husband grew up enjoying potato salad as an Easter side dish, and I think this may make our menu for Easter 2021.
I know this isn’t your traditional potato salad, but I actually think you’ll like it even more than the traditional recipe. It’s more flavorful and while I do love serving it warm, it’s also delicous at room temperature. And I don’t know about you, but mayonnaise-based salads served at room temperature seems a little weird to me. This is the recipe that we’ll be making again and again, because the simple dressing is so delicious.
- 2 lbs. baby red potatoes
- 8 slices bacon, chopped
- ½ red onion, chopped
- ⅓ cup apple cider vinegar
- 4 tbsp. Dijon mustard
- ½ tsp. freshly ground black pepper
- ¼ cup snipped fresh chives
- okhkkPlace the red potatoes in a large pot of salted water and bring it to a boil. Once they are tender, drain and set aside.
- Chop the bacon and place it in the pot. Brown the bacon and add the red onion, cooking until tender. Add vinegar, mustard, and pepper and cook for a few more minutes to let the flavors come together.
- Cut the potatoes in half (or quarters if they are large) and place in a large bowl. Pour the bacon and mustard mixture over the potatoes and stir to combine. Top with fresh chives and serve warm.
