Bruschetta is such an easy appetizer, and it’s hard to mess up. Fresh tomatoes and basil tossed with olive oil and balsamic vinegar and served with a little fresh parmesan on top is as simple and as perfect as appetizers can get. Traditionally served on crusty baguette slices, this time around you’re serving them on crispy homemade potato chips! Extra crunch, extra flavor, extra delicious.
This dish is so perfect for summer, and even though we’re months away from sunny evenings on the patio and firing up the grill you can still enjoy this delicious appetizer. You may even prefer it to traditional bruschetta. It’s a little lighter, which means you can eat more of it. A good problem to have if you ask me!
Appetizers should be easy without lacking in flavor when you entertain. When you entertain, you have a lot to focus on with just the main meal and you still want to be able to socialize with your guests. You can assemble the bruschetta topping in advance as well as bake the potato chips for some easy assembly before guests arrive. It’s also easy to refill the appetizer tray since these are sure to disappear.
- 1 large russet potato
- 4 roma tomatoes
- 3 tbsp. olive oil + more for brushing
- 3 tbsp. balsamic vinegar
- ¼ cup fresh basil leaves, thinly sliced
- 3 cloves garlic, minced
- ½ tsp. salt
- ¼ tsp. freshly ground black pepper
- Parmesan cheese for topping
- Preheat oven to 425 degrees Fahrenheit.
- Wash the potato and thinly slice. You want the slices to be about ⅛ of an inch thick.
- Brush the potatoes on each side with olive oil and place on a baking sheet lined with parchment paper. Sprinkle with salt. Bake for 20 minutes, flipping halfway while baking. If they are not crispy enough, bake for an additional 10 minutes.
- Meanwhile, chop the tomatoes and place them in a medium bowl. Add olive oil, balsamic vinegar, basil, garlic, salt and pepper and stir to combine.
- When ready to serve, spoon the bruschetta mixture onto the potato chips. Don't add any of the extra liquid as these will make the potato chips soggy.
- Top with fresh parmesan cheese and serve!
