Let’s shout it from the rooftops that it’s peach season! I can get local peaches from a farmstand near my house and I eat at least one peach a day. There are worse problems to have! I can’t get enough of this peach, prosciutto, and basil salad. It’s a great light lunch or dinner, and a perfect appetizer when you’re entertaining. I love to pair this with some crusty homemade sourdough and a glass of rose.
Did I mention this peach, prosciutto, and basil salad is also topped with creamy burrata? A little drizzle of balsamic vinegar and I promise there’s nothing else you’ll want to eat. This salad is just everything you want from summer. It’s perfect to enjoy out on the patio or deck. I love it as a perfect lunch but there’s no time of day this salad isn’t perfect for!
Summer salads are a way of life. I rarely want to turn on the oven if I can avoid it on our hot summer days, but with a salad as refreshing and filling as this one, I truly don’t miss a hot meal. There will be plenty of time for cozy meals come fall and winter! I love fall, but I’m truly enjoying this last bit of summer. I know fall doesn’t kick off until the end of September, but once Labor Day hits I’m officially in fall mode. My oldest starts pre-k right after Labor Day and once he’s in school it just feels like fall! Don’t let peach season slip away without making this delicious and easy salad!
- 3-4 peaches, sliced
- 3 oz. sliced prosciutto
- 1 bunch fresh basil
- 4 oz. fresh burrata cheese
- 3 tbsp. olive oil
- 3 tbsp. balsamic vinegar
- Sea salt and freshly ground pepper, optional
- On a platter, arrange peaches, prosciutto, and basil.
- Top with pieces of burrata cheese. Burrata is very creamy and soft, and you can simply pull it apart with your hands and spread on the salad.
- Drizzle with olive oil and balsamic vinegar.
- Sprinkle with sea salt and freshly ground black pepper, if desired.
- Serve immediately. Enjoy!
