This week I was making chocolate chip cookies to bring to our neighbors who just welcomes their first baby. I immediately searched for my go-to recipe for quick chocolate chip cookies and had them out of the oven 20 minutes from when I started making them. I love chocolate chip cookies: baking, eating, and giving them all fit the bill for me. But I have definitely tried my fair share of cookie recipes that haven’t turned out. I wanted to share my favorite recipes from the internet and why they are my favorite. So go ahead and indulge!
When You Need Cookies Now
These soft chocolate chip cookies from Pinch of Yum are my favorite. The use melted butter, which means you don’t need to wait for butter to soften or deal with the seemingly impossible task of evenly softening butter quickly without having frozen or melted pockets. Also, they have no chill time in the refrigerator. They are made in one bowl and come together in about 10 minutes. These are the perfect cookies to make when you don’t have a lot of time, are baking with kids, or just want something easy. They are perfectly soft and chewy; this is definitely a go-to recipe for me.
When You Want a Bakery Cookie
The New York Times Chocolate Chip cookies are legendary, and I love this recipe from Hip Foodie Mom. These cookies are the opposite of the first cookie recipe I mentioned because they take more time and more ingredients. The cookies require bread flour and cake flour, which you may not always have on hand. They also require your butter to be softened and have a minimum of a 24 hour chill time. BUT at the end of all of that you are rewarded with the most delicious cookie that you’ll swear came straight from a bakery counter. The dough can be frozen raw in individual scoops, which means you can pop a few in the oven and have warm chocolate chip cookies anytime you want them.
When You’re Feeling Fancy
The salted butter and chocolate chunk shortbread recipe from Alison Roman’s cookbook “Dining In” is one that has broken the internet. After reading about this recipe so many times, I knew I had to try it. This recipe is simple in it’s ingredients and it’s method. It does require salted butter and demerara sugar or raw sugar, which may require a special trip to the grocery store, but these cookies are worth it. The consistency is different from your typical chocolate chip cookie since they are a shortbread cookie, but the rich chocolate, buttery dough, and crunchy sugary outer coating come together to make the most decadent cookie. I read a review in an online publication of someone who didn’t like these cookies, but it was clear from the article that the author didn’t follow the instructions in the recipe. I highly recommend a stand mixer for these because the dough is pretty stiff, and definitely don’t skimp on the chill time. Use the full recommended time. You’ll be rewarded with cookies that take it to the next level, and they are worth it.

Anytime I need to bake something gluten-free, dairy-free, or both, I turn to Ambitious Kitchen. When it comes to chocolate chip cookies, I use this recipe. Monique, the food genius behind this blog, is also the creator of the most popular banana chocolate chip muffin recipe on Pinterest and I can vouch for this recipe as well. Her cookies are perfect, and I can’t recommend them enough if you or someone you know has intolerances to gluten or dairy. These chocolate chip cookies use almond flour and coconut flour, as well as coconut oil instead of butter. I also love that these use coconut sugar, which provide a wonderful nutty flavor to baked goods, similar to the way brown sugar amplifies the flavor of traditional chocolate chip cookies.
