Lemon thyme turkey patties are exactly the recipe you need to keep in your back pocket for an inexpensive but delicious meal. It comes together in 30 minutes or less too! You can use these lemon thyme turkey patties as burgers, serve over a salad, or enjoy with roasted potatoes and sautéed kale like we did. Kale always does really well in my garden, and I love being able to cut some to serve with dinner.
A lot of us probably cook with ground turkey. It’s a lean protein that’s inexpensive and readily available, which means I always have some in my freezer. Ground turkey does need a little bit of help to be made delicious, especially since it’s so lean. These lemon thyme turkey patties are so moist and full of flavor! I plan to keep a batch in my freezer at all times.
Lemon and thyme are such a great flavor combination. Fresh herbs are a must in my garden. Herbs can be so expensive at the grocery store and they are so easy to grow. You can even grow them in pots on a small patio or indoors near a window! Fresh herbs elevate any dish and add so much more flavor than dried herbs. Even if you don’t have a green thumb, you can certainly grow some herbs of your own to amp up your home cooking.
Easiest ever weeknight meal right here! And with it being summer, I’m not looking to do any fancy cooking on the weekend either. If you’re looking for a flavorful burger for the Fourth of July, these would be an excellent choice.
- 1 lb. ground turkey
- 1 egg, lightly beaten
- ½ cup Italian-seasoned breadcrumbs
- 2 tbsp. minced fresh thyme
- ¼ tsp. ground black pepper
- ½ tsp. salt
- ½ tsp. garlic powder
- ½ tsp. onion powder
- 1 tbsp. olive oil
- Zest and juice of 1 lemon
- Oil for cooking
- In a large bowl, combine turkey, egg, breadcrumbs, thyme, pepper, salt, garlic powder, onion powder, olive oil, lemon zest, and lemon juice. Use your hands to form patties about the size of your palm. This recipe will make 6-8 patties.
- Heat oil in a large skillet over medium-low heat. Cook patties until golden brown on both sides, being careful when you flip.
- Set aside to cool. Work in batches until all patties are cooked.
- Serve by themselves or as burgers!

How did you sautee the kale and the potatoes for this dish?

I saute the diced potatoes in a pan with olive oil with salt, pepper, and garlic powder. When the potatoes are almost done, add the kale and cook until wilted. Sometimes I add a squeeze of lemon at the end!
