What fruit or vegetable do you get most excited about in the spring? Most people (myself included) look forward to the earliest berries when it comes to fruit. On the vegetable side I love asparagus, but I’m also a huge fan of the underrated leek. It’s subtle oniony flavor is slightly sweet and not as in your face as an onion. It pairs well with potato for a super easy leek and potato frittata to serve for breakfast, lunch, a light dinner, or whenever you want!
To keep this recipe super easy, I used frozen shredded hash brown-style potatoes. You don’t even need to thaw them first! Leeks are just sliced, cleaned, and patted dry before being folded into a creamy egg base. This dish is simple but elegant, and truly perfect for any meal.
A frittata like this one is great to make on a Sunday to slice and enjoy for weekday breakfasts, but it’s also great for a vegetarian lunch option that’s still full of protein. Or you can enjoy this leek and potato frittata like Kevin and I did, with an arugula side salad for an easy dinner.

- 2 leeks
- 12 eggs
- ⅓ cup heavy cream
- 1 tsp. salt
- ¼ tsp. freshly ground black pepper
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ½ tsp. ground dried thyme
- ½ tsp. ground dried sage
- 1 heaping cup frozen hash brown-style potatoes
- ½ cup crumbled feta cheese
- Preheat oven to 350 degrees Fahrenheit and spray a pie dish with nonstick cooking spray. Set aside.
- Slice the white and light green parts of your leeks and place in a colander. Wash thoroughly, using your hands to break up the leeks and make sure any dirt is removed. Drain and pat dry, then transfer to a cutting board and roughly chop.
- In a large bowl, whisk together eggs, cream, salt, pepper, garlic powder, onion powder, thyme, and sage.
- Add leeks and potatoes and stir to combine.
- Poor egg mixture into prepared baking dish and top with feta cheese.
- Bake for 45-50 minutes until the center is set.
- Allow to cool for at least 15 minutes before slicing and serving.
