I’ve been sharing a lot of summery meals lately, but sometimes when that summer storm hits, or you have an unexpectedly chilly day, or you just want something comforting, maybe you reach for a recipe like this cozy instant pot beef stroganoff. I love a good instant pot meal, and I’ve been sharing a lot lately. The meals that I share on the blog are reflective of how we’re currently eating. At 30 weeks pregnant, I’m looking for easy dinners, both for now and to keep in my back pocket for recipes after the baby is born. Things like tacos, pastas, and pulled pork are all recipes that I can make with minimal prep.
Recipes don’t get easier or more delicious than this instant pot beef stroganoff. Start by browning the ground beef, and the pasta and most of the remaining ingredients, and stir in sour cream after just 5 minutes of cooking at high pressure. That’s it! You have a big pot of cozy pasta that will feed your entire family, that’s truly perfect for any time of year.
I owned my instant pot for almost a year before I tried it. I didn’t trust it to make good food and was pretty sure that it would explode. But the good new is, it’s one of my favorite appliances and I use it at least once a week. It’s the only way I make hard-boiled eggs, my favorite way to make shredded chicken, the best way to whip up steel cut oats for breakfast, and perfect for any quick and easy dinner.
- 1 lb. ground beef
- 2 cloves garlic, minced
- 1 small yellow onion, chopped
- 8 oz. mushrooms, chopped
- 2 tbsp. flour
- 3 cups beef broth
- 1 tsp. salt
- ½ tsp. pepper
- 1 tsp. ground dried thyme
- 2 tsp. Worcestershire sauce
- 12 oz. pasta of choice
- ¾ cup sour cream
- Set instant pot to sauté and add ground beef. Brown the ground beef, breaking into pieces as it cooks. Add garlic, onion, and mushrooms and cook until tender.
- Stir in flour, then add beef broth, salt, pepper, thyme, and Worcestershire sauce. Stir to combine.
- Add pasta and stir.
- Set instant pot to high pressure for 5 minutes. Manually release pressure when it's done cooking, then stir in sour cream.
- Taste and add more salt and pepper if desired.
- Serve immediately, enjoy!
