Chicken breast is not my favorite protein because I find it to be dry and lacking flavor. That’s not the case with these grilled chicken kebabs! They’re marinated prior to grilling to make sure that they aren’t dry and are very flavorful. The marinade uses Greek yogurt, lemon juice, lemon zest, olive oil, garlic, and oregano. Simply cut up your chicken and put them in a shallow dish with the marinade ingredients and let sit for 6-8 hours. Then skewer your chicken and heat up your grill. I used my indoor smokeless grill but you can also grill them outside or use a grill pan.
These chicken kebabs pair well with just about anything. I love having them with roasted potatoes and a green vegetable, but they would also be great with orzo pasta, tucked into a pita with hummus, tomato, and cucumber, or enjoyed all by themselves. I used chicken breast for this recipe but you can also use chicken thighs. Chicken thighs can be a little harder to skewer because they are thinner but they are just as delicious.
- 2-3 chicken breasts, cubed
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- 4 cloves garlic, minced
- ½ tbsp. dried oregano
- 2 tbsp. olive oil + more for grill
- Juice and zest of one lemon
- ½ cup plain Greek yogurt
- In a medium bowl whisk together salt, pepper, garlic, oregano, 2 tbsp. olive oil, lemon juice, lemon zest, and Greek yogurt. Place the chicken in a shallow dish or in a gallon size ziplock bag. Pour the marinade over the chicken and mix to coat. Refrigerate for 6-8 hours.
- When it's time to grill, skewer the chicken onto kebabs and preheat your grill. I used a smokeless grill set to 450 degrees Fahrenheit. You can also use a grill pan or an outdoor grill. Brush the grates of your grill or grill pan with olive oil and place the kebabs on. Grill for 10 minutes, rotating halfway through cooking. Ensure the internal temperature had reached 165 degrees Fahrenheit before serving.
- Serve with your favorite side dishes! I like using roasted potatoes and broccoli.
