If there is one cocktail I can’t get enough of, it’s a paloma. I love bright citrusy flavors in my cocktails, which is why my go-to’s are margaritas, palomas, or Moscow mules with a generous squeeze or two of lime juice. A while back I created a delicious Christmas cocktail with rosemary simple syrup, and I wanted to create something that used the same simple syrup but was more geared towards spring and summer flavor. Enter this grapefruit rosemary paloma. Made with tequila, fresh grapefruit juice, rosemary simple syrup, and a few other staples, it’s a cocktail you’ll go back to again and again.
Here’s what you need for this recipe.
Easy Paloma Recipe Ingredients:
- Tequila – I am not a tequila connoisseur but I always go with Jose Cuervo Silver
- Grapefruit juice – I use freshly squeezed
- Lime juice – again, freshly squeezed is the way to go
- Rosemary simple syrup – I’ll walk you through how to make this!
- Sparkling water – plain or flavored sparkling water works great! I have used grapefruit and lime sparkling waters with excellent results.
- Coarse salt – optional for the rim, but I always like salt!
Instructions:
- Shake the first four ingredients in a cocktail shaker
- Rub a lime wedge around the rim of your glasses, then tip onto a plate or shallow dish with coarse salt on it.
- Carefully fill the glasses with ice (or as I like to do, add a single giant ice cube.)
- Pour evenly between two cocktail glasses and top with sparkling water. Simple, easy, delicious, and refreshing.
You can enjoy this cocktail anytime of year, but with the bright citrus flavors and hint of rosemary, it’s perfect for spring and summer. You better believe that I’ll be enjoying these grapefruit rosemary palomas all summer long! To make them look a little extra fancy, I served mine in glasses with a single giant ice cube. I have tried this recipe with both fresh and pre-squeezed grapefruit and lime juices, but you will want to juice everything yourself for best results. With a simple recipe like this where the grapefruit and lime juices are meant to shine, you want to use fresh, quality ingredients. I recently purchased this citrus juicer and it’s been a game changer for squeezing every drop out of lemons and limes!
- ½ cup water
- ½ cup granulated sugar
- 4 sprigs of rosemary, ,leaves removed, coarsely chopped
- 6 oz. tequila
- 8 oz. grapefruit juice + additional grapefruit wedges for garnish
- 2 oz. lime juice + additional lime wedges for garnish
- 6 oz. sparkling water (plain or grapefruit or lime flavored works well)
- Coarse salt for rims (optional)
- Place water, sugar, and rosemary in a small saucepan. Bring to a simmer. Cover and let simmer for 15-20 minutes. You won't use all the simple syrup for this recipe but it's a great addition to herbal tea or other cocktails!
- In a cocktail shaker or measuring cup with a spout, shake or stir together tequila, grapefruit juice, lime juice, and 1.5 oz. of rosemary simple syrup.
- If you're adding salt to the rims of the glasses, run a lime wedge around the rims of the glasses. Pour some coarse salt onto a plate or in a shallow dish and turn the glasses upside down onto the salt.
- Carefully fill the glasses with ice, then divide the cocktail mixture between the two of them.
- Top with sparkling water. Garnish with lime or grapefruit wedges if desired.
